It is more towards how being in the military affects one's lives, but hld's 'Star-crossed Lovers' is a good one.

By 'sci-fi' are you looking for stories set in the future?
Not coded Sci-fi, but A Reluctant Hero by Douglas Fox
Synopsis: Joshua Warner, a National Guardsman, and the remains of his tank crew, find themselves trapped behind enemy lines with an unlikely companion - a high school cheerleader, eighteen year-old Molly Lawrence. This story follows their struggle to survive and escape capture by the Chinese as World War III reaches northern Washington State. This story is set early in World War III in the A Perfect World/Greenies universe with the kind permission of Al Steiner.
The Private by Random Writings
Unfinished, and hasn't been updated for three years, so it probably won't be.
[makes note that come the revolution, Centaur must be placed in one of the first tumbrils for recommending a story without mentioning that it's incomplete and inactive]

IMO, 'The Private' is one of the exceptions that proves the rule: it's one of the best stories on SOL despite being incomplete.
I'm not sure it's even possible to come up with an ending that isn't a let-down compared to the rest of the story.

The Jade Force of Misera by Lazlo Zalezac is technically a series of stories, but it's all one big novel in actuallity. And they are all multi-chapter as individual segments.
