As part of a celebration of Flying Cow Day, February 18, 1930, when a Guernsey cow named Nellie Jay became the first cow to fly in an airplane and be milked in mid-air, I asked CoPilot to create a herd of whimsical cows.

1. The Polka‑Dot Daydream Cow

A serene creature whose spots rearrange themselves depending on her mood. When she’s content, they drift into constellations; when she’s excited, they pulse like fireflies.

The Polka-Dot Daydream Cow’s milk is said to shimmer faintly with pastel swirls when poured at twilight. Some say the dots drift lazily across the surface like sleepy jellyfish. Others claim the milk tastes like vanilla clouds and leaves you humming lullabies you’ve never heard before.

Of course, if you bottle it, the dots vanish. It’s a fleeting magic—best enjoyed fresh, under a sky full of stars.

2. The Clockwork Cow

A brass‑and‑copper marvel who moves with soft ticking sounds. Her tail is a winding key, and when she’s fully wound she trots in perfect circles, leaving spirals in the grass.
