Looking for stories centered around the theme of a complete fresh start. MC faces some sort of adversity or just simply ups and heads out to a new location to restart life.

I don't know your preferred genres. You might not like Western stories, but FantasyLover's story Escape from Lexington fits.
I;m sure there is also one by harddayslnight, but the title temoporarily escapes me.
In the same vein, Lazlong's Wagons Ho! and Washed Up, though they are both behind the paywall

There must be dozens of stories on SOL in which the protagonist leaves a cheating spouse and starts afresh elsewhere. Sadly the subject matter doesn't rock my cradle so I can't personally recommend any, but I'm sure the more knowledgeable folk here should be able to come up with some.

"Magic Carpet" by Wes Boyd
Push that button, and your life will change forever! Jennlynn Swift is a college student who's down on her luck after her parents threw her out. She sees only one hope of being able to pay for college and her flying licenses. Little could she dream that pushing the doorbell of a Nevada brothel would lead to the things it does, which include being a national hero.
It's probably on another site.

It's probably on another site.
You can read it for free on his Spearfish Lake Tales site: https://www.spearfishlaketales.com/12mc/mc.htm Great story from an excellent author who sadly passed away in 2018.
It's the first book of the Bradford Exiles Series (it's not on SOL).
Whilst you are there, Square One fits your profile well, too.
Yep, book 8 in the Spearfish Lake Tales. I have 50+ of Wes' books in my custom library and so far have read maybe half of them. Haven't found one yet I didn't like.
huh, I'll have to give it another try since I can't remember it :D
Remembered it when I started reading it and quit again around the same spot...
Janna Leonard has that theme in a few of her stories. In particular Ashley, Chance and The Hitchhiker
JT Malone's A Benign Something
Ann Douglas' The Open Door
Lisa Summers' A Kiss Before Dying
Probably any story with Runaway in the title
Oyster50's Dorable, Tommy and Mi Vida
Some of these involve physically changing locations as well as circumstances, others just drastically changing circumstances.
Two great stories:
https://storiesonline.net/s/73386/concordia
https://storiesonline.net/s/13087/jacobs-granddaughters
The author wrote a couple more stories with a similar plot: Heart Condition, There Is a Reason.
The "Heart Condition" MC is recycled in Concordia, TIaR is standalone.
I addition to Oyster50's stories Dorable, Tommy, and Mi Vida already mentioned by tendertouch, some more of Oyster50's stories meet the criteria:
Cindy, Nikki, Christina, Dana.
In Cindy, Nikki and Cristina the teenage girls ignored/abandoned by their slutty single moms latch onto an older man (about 40), their later husband, which changes their life tremendously.
Dana is the great granddaughter of Edwards former high school English teacher and now neighbor, who has to take in the 14 year old girl because the mother went to jail and the girl is in a shelter. Edward helps collecting the girl and ends up as her friend and later her husband.

Quite a few of Ernest Bywater's seem to fit the request. The first which came to mind are:
Finding Home
Life Is Change
Mallard Heir
Odd Man in College
Play Ball!

Nothing I Can Do About It Now by Denham Forrest
In some ways Songbirds by Jay Cantrell
Good Hunting, limab

I'm just recovering from a short and nasty respiratory infection and spent maybe 8 hours awake on Wednesday.
If things improve much more I'm gonna have to wear shades!
If I may, I will suggest one of my own offerings: His Lucky Charm
https://storiesonline.net/s/65806/his-lucky-charm.
"After losing his beloved fiancΓ©e to a dishonourable rival and being wounded in the Crimean War, Captain James Tremayne leaves England as a bitter man. He heads for the Western Territories of the United States and eventually becomes a digger during the Pike's Peak Gold Rush. 'Baltimore Rose' Donegal is a saloon whore and convict who in 1861 crosses his path in Fort Laramie. Read how she of all women becomes His Lucky Charm and much more."
Some more by Ernest Bywater that may fit:
Interesting Times;
Runaway!;
Keeping a Promise;
Survivor; and its sequel Survivor: Moving On;
Star Performance starts with the MC coping with his new life, what caused the change gets revealed later.
I'm uncertain if Rough Diamond fits your request.
