The second sounds like WTSman's "A Weekend to Remember"
I've read a couple more that fit the first one better although I can't remember the titles or authors. The one that fit the most closely is an older one that involved them visiting an abandoned quarry for a picnic or swimming. Hopefully that will ring some bells.
I'm not sure it could fit the first one better since that's a pretty solid description of that story but I'm always happy to see others that would match it.
