You can block Mat. That's what I did. It doesn't cut out all the stories but it removes the majority of them.
I think that Pixy has the right idea. If you don't like his posts, don't read them and don't vote them down. Personally, I like his stories (for the most part), and I know that he usually does not use AI for either story generation or illustrations. If he does, he usually tells you.
But, if you don't like short, short stories, don't read them!
Really? Works well for me. The only story of theirs that I see, is when it pops up on 'The Random story from the archives', but Laz explained the reason for that years ago (It's because of the mechanics of RSFTA) and since it's only occasionally (That they pop up), it's not an issue.

My wife was working with a firm for monitoring her blood pressure and reporting the results to her doctor. She would talk with them frequently to discuss the results and what they meant.

Aside from the possibly-AI Mat Twassel stories, can you give us some examples of AI-written stories posted here on SOL?

Of the approximately 1800 stories I've posted to SoL, only two or three of them contain AI text, and in those cases the AI was used to create only a portion of the story. As an example, in "Give the Girl a Hand," I used AI to create the advertisement which forms the first part of the story. I think AI did a pretty good job with the ad.
I sometimes use AI to create backgrounds images for my illustrations. Usually I've noted any AI contribution.
In Mat's illustration for my Quaileggy Bananagram sentence, there's a very clever AI-generated text backdrop about the auction. It's probably more worth reading than my one-sentence story :-)

I've read a couple of them, and while not my cup of tea (generally don't care for flash), they seemed original enough.
