An important note — even if your prompts are anonymized, it only takes a few data points to identify you. You're still at the mercy of the LLMs and their Terms of Service.
If you want truly secure AI, run LM Studio or something similar, along with an open-source LLM on your computer. I've tested LM Studio with DeepSeek and confirmed no network connections of any kind are made except for the original download. You can turn off WiFi, and it will still work.
