Haven't seen them recommended yet, but many of Kris Me's start out with a regular "Joe/Jane" coming across a ring or medallion with a couple of gem stones embedded, and then begin to develop extra abilities or senses.
Delta would be my recommended story to start with .. mixes a future setting with early interstellar space travel and exploration of another solar system ... and of course - magic.
I haven't had a chance to track it down yet, but I remember a story where the protagonist either gets attacked and slightly beaten up, or just really drunk or both, and takes a potion not really realizing what it is. He wakes up in a totally different space that he winds up realizing is another dimension or something similar. He also discovers he can do magic, rather strong magic. He finds out there are other magic users that are using their magic to abuse others. He set out to determine the size of the problem and hopefully cut it down some.
Howard Faxon has several including at least 2 in the Darkover setting, a couple where magic is coming back to our universe(Deathstalkers and?) also Never Ever Give Up.
