I'm looking for stories where the main character is a guy who falls in love with a Spanish woman. I don't particularly care about the setting. I love harem stories. That's not a stipulation for my request but you get bonus points if the harem is included.

For the former, all that comes to mind is a dead-tree romance by Georgette Heyer—I think it was An Infamous Army? One of hers set in the Spanish campaign of the Napoleonic Wars.

I immediately thought of 'Mi Vida' by oyster50, although the female is hardly a woman.
I vaguely remember another, rather strange, story in which the protagonist has relations with a number of women but in the end commits to the Hispanic woman who was with him throughout. Sadly the title and author elude me.

In real life you may like the reminiscences of The Diplomad. Jewish American career diplomat who married a Spanish lady. IIRC he killed a terrorist who tried to kidnap her. She berated her husband for having a gun and derided the corpse's lack of sartorial flare. Most of his blog posts are highly political, but there are a few social gems and stories of daring do.

By blood, Anna was 1/4 Mescalero Apache, enough to be accepted by the Garcia tribe, but also 3/4 Hispanic of the Mendoza line.
The Sharpe's Rifles series has several stories with romances with Spanish women.

One of the earliest, perhaps the first book written, Sharpe has an affair with a young Spanish (or perhaps Portuguese) noble woman.
Later in the series Sergeant Harper becomes involved with a Spanish guerrilla leader.
Probably not enough romance, and no sex, so far, however, in my story Aztlan Portal a MC is having feelings for a teenage girl he rescued M L 25 F L 19. He is from a privileged background, she is from a lower caste, but got a good education (related to a feeling of obligation from his family). Now they are both refugees.
2 secondary characters, a former Mexican Army officer turned Sicario, and a woman his age, sole surviving child of a wealthy magnate, she is the CFO and heir to his conglomerate.
The setting is the Mexican state of Chihuahua, and surrounding US and Mexican states. Numerous characters are of Spanish heritage (Mexico, Spain, Cuba, etc.) However, there are many aspects to the story. Relationships are platonic for now. More romance, possibly some sex may occur as the story progresses.
