For church, there's Michael Loucks's Good Medicine stories.
IIRC Fowler Gray's Give Me That Old Time Religion was enjoyable, although it's incomplete - last update 2006 :-(
I can't find it again (perhaps someone can help, hint, hint) but I seem to recall an incomplete SOL classic story in which a sinister church manipulates a teen boy towards marrying his sister.
