does anyone remember a story I read here on sol where the MC was a genius young cook who went to work in a high class restaurant and eventually took over/opened a side branch. Mc was male. I do not remember any other details.

The other well-known young cooking story is Lazlo Zalezac's The Millionaire Next Door, but it doesn't quite match your description either.
In Millionaire, a young guy with plans to eventually open a restaurant works his way up from bus-boy to cook at a chain place, then later has a business (and quasi-romantic) relationship with someone on the corporate side. His own company was separate, though.
