I am looking for two Sci-Fi stories. Story one is about a man transplanted (possibly as a do-over) to a planet where there is apparently only primitive tech. After a foreign ship lands and the new people use some of the inhabitants as slave labor do the locals show that they are not primitive at all.

The second story involves a young man and woman who are both terminally ill. They meet at the young man's cabin when a strong storm catches the woman out. They wake up the next day to find that they are in a new place and time.

Your first story description reminded me of Cordwainer Smith's Instrumentality of Man series:

Some additional information on the first story. It takes place on another planet(dimension). The local inhabitants are farmers with an animal-based culture. They are found and invaded(peacefully) by another planet's ship and those people start to enslave some of the people. The people fight back, and when the invaders think that their advanced tech will win the day, the locals use their hidden advanced tech to win the day.

The answer to the second story was indeed 'Will and Carrie' by Rotendrachen
