even better if there is an attention to realism like seen in The Martian not just space opera fantasy though I won't rule them out

You might try Three Square Meals by Tefler (in progress). Maybe Tandra by John Wales.

Try some of the stories by Timm. He has two series FTL and Bounty Hunter, and some stand alone ones if I remember correctly.
