What's the name of the wooden shelf-like thing that can be fitted over a hospital bed so that a patient's dinner can be stood on it, or their laptop etc.

Table?

Seriously, it's a table on wheels with an adjustable height.

Personally, I find it impossible to use positioned over the bed. (And yes, I've been hospitalized a couple of times in the last few years).

Put it next to the bed and let me sit up on the edge of the bed.

depending on the time period and the style it's often called a tray, bed table, or table trolley with tray being the most common term used by the hospital staff. Some are like a giant 'U' with the wheels on the ends of the 'U' and roll over the bed from the bottom, while others are like a giant 'U' on its side with the wheels on the outside of the bottom leg and they slide under the bed from the side. Now, you may find some that are on a swing arm that's part of the bed and it swings up and around over the bed.

Yes, I've seen those too.

I've also seen what could be called an overbed table that doesn't stand on the floor but is attached to either side of the bed frame when needed.
