A quick Google search has shown all those variants in common use. I'm veering towards 'Oh Shit' moment, purely because it looks lop-sided when only the 'Oh' is capitalised.
Yet another not 2 by 4 worthy issue ;-)

I most often do it as "an oh shit! moment," but if the occasion wants more emphasis, I might capitalize the O.
Some depends on the context.
Well Shit! Said after breaking a tool.
Awww Shit! Said as I watched a jack knifing semi in my rear view mirror
Oh Shit! Said when I forgot something important.
Holy Shit! Said as I watched a rogue wave top the rig platform I was working.
Sheeeut! Said as I topped a sand dune and caught serious air in a quad.
It reverts to various F configurations after that.
Fuck Me!
Oh Fuck!
Fuck Me Runnin!
Fuckin Hell!
All more or less depending on the severity of the event or moment.
I've seen in a dead tree book.
A: describes some really bad event.
B: "Fuck! Shit!"
A: "Shit Fuck would also have been accepted."
A: "Shit Fuck would also have been accepted."
That one I've heard. The specific incident was a rapidly escalating one. Not sure how it should be written. Shit!...Fuuuck!!! First half said on sighting the wave, the latter half said as he was being swept overboard.

That's the closest context.
I like the exclamation mark at the end. I think I'll use up one of my ration of three per novel. Except that I'm hoping my pantsed story will be well short of a novel :-(
