but story genres are always in a dropdown.
Yes, but that dropdown exists in more places than just the story/chapter submission wizard.

I think I did a few year ago, but he found that the genre where self explanatory, so that was a no :)

Granted, some of those stories might have been posted before the current ability to tag a story with a genre existed.

Many were posted after, but before I made it mandatory to select a genre.

On SoL, Military & war are two tags/code and not a genre.
Stories using those tags are spread all over the place with regard to genre.

true (unless it is changed to the genre non-fiction)
incest
and so on

Trust me, you don't want to go down that rabbit hole. The whole theory of genre and what is or is not applicable is very modern and very complicated.
As recently as the 1960s, major critical theorists used the term genre to refer to what we would call different forms of media. For example, in Anatomy of Criticism (1957), Northrop Frye referred to the three main genres of fiction as novels, poetry, and theatre. In later essays, Frye used the word genre closer to the way we would today, so clearly the definition was fluid in that period.
