Go look in the Florida Friends collection by Dual Writer. Any story with Chuck in the title will feature martial arts. I think there are also a couple without his name in the title that also have him playing a role.
The whole series is worth reading.
Many of the late E. Bywater's stories - for ex Finding Home and later DiD universe stories.
Also a number of Uncle Jim's various stories ...

Depending on your definition of sci-fi, quite some of Ka Hmnd's stories qualify. If the setting is just a fictional world without fae, mages etc. there are some like The Thief Taker, Archer; if you include Elves there are far more like Ranger of the North, A New Beginning.

A lot of stories mention martial arts but very few have detailed fight scenes.

The Living Next Door to Heaven series steadily evolves some Tai Chi into a killer superpower. The book is really about a dating club that becomes a harem, but the martial arts develop too.
Wes Boyd's Spearfish Lake stories have some characters who do a kind of everything-goes thingy. Its always tangential but useful.

Ooo.. the Steel Bracelets in Andromeda Chained
There is plenty of it in my A Well-Lived Life series, though it doesn't start until Book 6 of Series 1, and really comes to a head in Book 7 of Series 2.
I recommend two great stories - A Fresh Start by rlfj is a remarkable story that includes a martial arts match that rivals the Nixon ping-pong game. A great series, Stupid Boy by GYounger, features a number of characters who are at home at a dojo, the best of whom is Cassidy Hope.
