But can the posts have a css minimum width of, say, 50%?
The deeper replies are impossibly narrow, going all the way down to a single column of letters on my iPhone screen.

I added a minimum width setting for the posts. You'll need to reload the stylesheet. Maybe try reloading a forum page multiple times.
I didn't have much time to find any specific thread that displays this problem, so if it didn't work, please let me know which thread is problematic in order to test with.

I tried and I tried and I couldn't figure out why safari is not respecting the 'min-width:' setting for the posts and forcing side-scroll.
At this point, mostly because I'm very busy with more important stuff, all I can say, for that thread, turn your iPhone to landscape orientation.
