Samantha was way out of Darrin's league so why was she attracted to him?
{The IP said "attractive" but in context I think you meant: attracted.}
(I watched re-runs of Bewitched when I was a kid in the 1970's. I don't think I have watched a full episode of Bewitched in more than 40 years. I have seen clips of the show discussing aspects of the show on TV, and on YouTube. I have even seen comparisons of Bewitched and Mad Men. It is an iconic show and has had "spin-offs" even decades later. I still remember quite a bit of the show.
Why would Samantha, seemingly a powerful Witch be attracted to a mere mortal, such as Darrin Stevens?
I don't think it was important to Samantha, none-the-less, Darrin is not unattractive. Compare him (either actor) to most of the male cast of Mad Men {portraying Men Advertising, set in the era that Bewitched was produced} and he would fit in. If he appears not quite handsome in Bewitched, he isn't bad looking.
Most important, it would seem, to Samantha, Darrin accepts her for who she is "warts and all" He Knows she is a Witch. Her magical/supernatural abilities are at times a point of conflict; yet he Loves her despite that. Darrin never tries to use her extraordinary abilities to enrich nor empower himself. Think about how many stories on SOL and elsewhere when characters have access to a power that could make them rich, or at least comfortable and don't use it! Most use their powers to advance themselves, some ethically, others in quite abusive manners. Darrin insists on Not (ab)using Samantha's powers (except when it is the only method to repair a problem caused by magic).
Darrin seems to be legitimately concerned about Samantha and the consequences for her if her supernatural abilities were discovered. As I recall, there was at least one episode that focused on the Salem Witch Trials. Often other Witches and Warlocks mentioned the dangers posed by ordinary mortals discovering witches and wizards. Despite their concerns about the dangers, many of the witches and wizards persisted in using, sometimes abusing their magical abilities; even though there were indications that while magic was powerful magic users were not invulnerable to mere mortals.
Arrogance was a fault of nearly every Warlock and Witch we saw in Bewitched. That alone would be a powerful reason for Samantha to be wed to Darrin. He treated her as a partner; rare in the era; Darrin often put Samantha's wellbeing ahead of his own; often an indication of true love! Although Samantha often seemed to find using magic irresistible; in particular if "Darrin would Never Know" (although that didn't always work). Samantha seemed to find the modern world attractive, and Darrin was a key to her living in the modern world. Let's face it, magic as depicted in the series had all kinds of "warts" unintended consequences, and sometimes was more effort than a technological alternative.
Darrin never abused Samantha, never hit her, nor exploited her. The 1960's were much better than the 1600's, etc. Physical violence is a sad reality of human interactions, in any era. It may seem a low bar to say he never hit her, however, it is also a big thing too.
Why would Samantha be attractive to Darrin? A key factor for most men is that she is good looking. Samantha is sweet, generally good natured, she seems to genuinely care for Darrin, and is willing to help him succeed. She is willing to (somewhat) give up magic and to live a mundane life with Darrin.
