A recent UK TV interview was conducted in front of the usual "wallpaper" of sponsor logo's etc, which were in-dispersed with the slogan "There are no boundaries in cricket". Which I presume means that none of the English batsmen can actually hit the ball that far...??

The b could be for bacon, they can put it on both pancakes and burgers, and on beans if they want to. For a Mexican touch, they could offer burritos...

Several years ago, there was a church who got sued by this chain. They called themselves "international house of prayer" then tried to go by IHOP too. I'm guessing they still don't have clearance, because companies still hold onto old aliases after they're done using them. After Federal Express changed their name to FedEx, that didn't give everyone license to grab the old name.

I have one burning question in my mind that I've been trying to ignore. I can't help it, but I must ask - If IHOP becomes IHOB, where will all the one-legged waitresses be able to work?
It's a lowercase "b", but I wonder if it would be trademark infringement if they made the "i" lowercase, as in:
iHOP or iHOb

The problem is that since the 'b' makes the 'o' look like it's lower case in their new signage - IHob - now it looks like they're advertising tampons. (o.b. is a tampon brand name, for those who don't know.)
I have seen speculation that the whole IHOb thing is an attempt to replicate what happened with New Coke, which was a short term fiasco for Coke because few liked New Coke, but ended up being a positive for Coke in the long term because they re-released "classic" Coke and the publicity around the New Coke fiasco got them a lot of press.
If this is the case, look for IHOP to cancel the name change at the last minute due to public outcry.
As I recall it, the Coca-Cola Company did taste tests and asked drinkers whether they thought they should introduce the new drink. The response was an enthusiastic "yes." What they hadn't asked those in the taste tests was whether New Coke should actually replace Classic Coke, and the answer to that question, apparently, would have been an overwhelming "No."
Those taste tests could have had problems with selection bias. New Coke had it's adherents right up to the point Coke discontinued it, there just weren't enough of them to make it worth Coke's efforts.
Looks like they did it to get a BOATLOAD of FREE advertising! Very smart on their part...
